Chick Pea, Goat Cheese, Beet, etc Pizza

This pizza was initially inspired by my friend’s overly beety CSA load. Well, that and the fact that we wanted to make dinner together, but we didn’t want to grocery shop. This pizza came together based on the items in my fridge.

We’ve made this twice now, so clearly we are quite pleased with the concoction, and unfortunately I didn’t take phenomenal pictures either time (it’s hard to cook, chat, AND shoot pictures at the same time, especially when you’re not in the blogging mindset (yet!)).

Yes, if it was whole wheat dough it would be more nutritious, but we didn’t go that route (it’s harder, we were lazy).

Ingredients:

  • pizza dough (or yeast, flour, water, and salt)
  • Chick pea spread (2 cups chick peas, a bunch of roasted garlic (to your taste), olive oil, cumin, salt, pepper) (and a food processor or a lot of determination)
  • Toppings! Beets (roasted), sauteed mushrooms & onions, and goat cheese

If you’re not sure how to make pizza dough, I recommend this:It’s very very easy.

I mean, it takes a little time, but it’s not even hard a tiny bit. (especially if your friend insists on kneading!)

All right, so you’ll want to prepare the toppings by roasting beets and garlic, sautéing onions and mushrooms in olive oil, and, once the garlic is roasted, making the chick pea spread.  For the chick pea spread, just mix the chick peas, olive oil, roasted garlic, and spices around until you’re pleased with the taste. you might want to add some water, too. Just play around until you like what you’ve got. Then it’s assembly time! If you’re not sure how to spread out pizza dough, I recommend this: 

Google never fails. You might want to bake the pizza dough a little bit first — like 5 or so minutes in a 425 oven? It’s hard to mess this up. I recommend using either parchment paper, a floured pan, or one of these fancy SlickMats that my friend/roommate/pizza co-creator has.Then just cook it in a hot (I usually do 425–I think I read that somewhere, but I’m not so sure) oven until the crust is browned–usually about 10-12 minutes, depending on the size of your pizza. Those potatoes were also CSA overload items. And enjoy!
